- In a mixing bowl, whisk together the low-sodium soy sauce, maple syrup, rice vinegar, minced garlic, ground ginger, and optional vegetarian oyster sauce until smooth. Set the sauce aside.
- Heat 2 tablespoons of sesame oil in a large wok or skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the red bell pepper, julienned carrots, broccoli, snow peas, baby corn, and mushrooms. Stir-fry for 7-8 minutes until vibrant and tender-crisp.
- Lower the heat and pour the prepared sauce over the vegetables. Stir to coat and cook for 4-5 minutes until the sauce thickens.
- Taste and adjust seasoning if necessary by adding more rice vinegar or soy sauce.
- Serve your Easy Pad Pak over rice or noodles and garnish with fresh herbs if desired.
