  • 1 pound Italian sausage sweet or spicy, sliced
  • 1 medium onion chopped
  • 1 bell pepper any color, sliced
  • 2 cups zucchini sliced
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  2. Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
  3. Stir in the zucchini, cherry tomatoes, garlic, oregano, basil, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and the tomatoes are slightly blistered.
  4. Remove from heat and garnish with fresh parsley before serving.
