- Stir in the zucchini, cherry tomatoes, garlic, oregano, basil, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and the tomatoes are slightly blistered.
- Remove from heat and garnish with fresh parsley before serving.
