Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 1.5-quart casserole dish.
  2. Cook the ground sausage in a large skillet over medium heat for about 7-10 minutes until browned. Drain excess grease and return sausage to skillet.
  3. In a large saucepan, boil 3 cups of water. Stir in 1 cup of grits and ½ tsp salt, cook for 5-7 minutes until creamy, then mix in ¼ cup of butter and ¾ cup cheddar cheese with the cooked sausage.
  4. In a mixing bowl, whisk together 4 eggs and 1 cup milk. Scramble in a non-stick skillet over medium heat for 3-4 minutes until halfway cooked.
  5. Combine the half-cooked eggs with the grits mix and pour into the greased casserole dish, spreading evenly.
  6. Dot the top with remaining butter and bake for 25-30 minutes or until lightly browned.
  7. Add more cheese on top if desired and bake for an additional 3-5 minutes until melted.
  8. Let the casserole rest for about 5 minutes before serving.
