Step-by-Step Instructions
  1. Wash the English cucumber, dry it, and slice into long, thin ribbons using a mandoline or vegetable peeler. Aim for 1/8 inch thickness.
  2. In a bowl, mix cottage cheese, dill or chives, lemon juice, salt, and pepper thoroughly.
  3. Lay 2-3 cucumber ribbons slightly overlapping, spoon a tablespoon of the mixture at one end, and roll snugly.
  4. Chill the assembled wraps for 15-30 minutes before serving.
