- Preheat your oven to 325°F (160°C). Prepare your baking environment with a silicone mold or muffin tin.
- In a blender, combine the large eggs, ricotta cheese, salt, and black pepper. Blend until smooth, about 1-2 minutes.
- Lightly grease your molds or muffin tin. Pour the egg mixture into each cavity until they are about 3/4 full.
- Place the filled molds in a larger baking pan. Pour hot water into the outer pan until it reaches halfway up the sides of the molds.
- Bake for 25-35 minutes, until set and no longer jiggly in the center. A slight golden hue indicates they are ready.
- Cool slightly for about 5 minutes, gently pull on the edges to release the bites, and turn them out onto a plate.
- Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months.
