Prepare the Beef Patties:
- In a large bowl, combine ground beef, black pepper, sea salt, and onion powder. Shape into three patties, ensuring they are about the same size as the bread slices. Heat a nonstick skillet over medium-high heat. Cook the patties for 2-3 minutes on each side, then reduce the heat and continue cooking for 5 more minutes until the internal temperature reaches 160°F (71°C).
Make the Special Sauce:
- In a small bowl, mix mayonnaise, ketchup, bacon bits, sweet relish, and sugar. Stir until smooth and set aside.
Assemble the Patty Melt:
- Butter one side of each slice of rye bread. Heat a skillet over medium-low heat. Place one slice of bread, butter-side down, in the skillet. Top with two slices of cheddar cheese, a beef patty, and two slices of Provolone cheese. Spread the special sauce on the unbuttered side of another slice of bread, then place it sauce-side down on top.
Toast to Perfection:
- Cook the sandwich for 2-3 minutes on each side until the bread is golden and the cheese is melted. Repeat with the remaining sandwiches.
