  • 1/4 cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), eggs, and vanilla extract. Mix until smooth and well combined.
  3. Add the baking soda, pumpkin pie spice, and salt to the mixture. Stir until fully incorporated.
  4. If using, fold in the chopped walnuts or pecans for added texture.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
