Ingredients

  • 1 box pumpkin spice cake mix or homemade pumpkin cake
  • ½ cup cream cheese frosting
  • 12 oz white chocolate chips or candy melts
  • 1 teaspoon coconut oil optional, for smooth melting
  • Sprinkles or crushed nuts for decoration optional
  • Lollipop sticks

Method
 

Step 1: Bake the Cake
  1. Prepare the pumpkin spice cake according to package instructions or your homemade recipe.
  2. Let the cake cool completely before proceeding.
Step 2: Crumble the Cake
  1. Crumble the cooled cake into fine crumbs using your hands or a food processor.
  2. Transfer the crumbs to a large mixing bowl.
Step 3: Mix with Frosting
  1. Add the cream cheese frosting to the cake crumbs.
  2. Mix until the texture resembles dough and holds together when pressed.
Step 4: Shape the Cake Balls
  1. Roll the mixture into 1-inch balls.
  2. If making cake pops, dip the end of each lollipop stick into melted chocolate and insert it into the center of each ball.
Step 5: Chill the Cake Balls
  1. Place the cake balls on a baking sheet lined with wax paper.
  2. Freeze for about 20 minutes to firm up.
Step 6: Melt the Chocolate
  1. Melt the white chocolate chips or candy melts in a microwave-safe bowl.
  2. Heat in 20-second intervals, stirring between each, until smooth.
  3. Add coconut oil for a smoother coating if desired.
Step 7: Dip the Cake Pops
  1. Dip each cake pop into the melted chocolate, ensuring it’s fully coated.
  2. Gently tap off excess chocolate and stand the cake pops upright in a styrofoam block or lay them flat on wax paper.
Step 8: Decorate
  1. Before the coating hardens, sprinkle decorations like festive sprinkles, edible glitter, or crushed nuts on the cake pops.
