  • 1 box 15.25 oz yellow cake mix
  • 1 cup crushed pineapple drained
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans optional
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple, vegetable oil, eggs, and sour cream. Mix until well combined and smooth.
  3. Fold in the shredded coconut and chopped nuts (if using) until evenly distributed.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  7. Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, poke holes all over the top of the cake with a fork.
  8. Drizzle the glaze over the warm cake, allowing it to soak in.
  9. Let the cake cool completely before serving.
