  • 1 package Cocktail Sausages Choose gluten-free varieties
  • 1 cup Pineapple Chunks Fresh works best, thawed frozen is acceptable
For the Glaze
  • 1/2 cup Brown Sugar For caramelization
  • 1/4 cup Soy Sauce Ensure gluten-free or use coconut aminos
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Ginger Fresh ginger can be used

Method
 

Preparation
  1. Soak wooden skewers in water for 20-30 minutes to prevent burning.
  2. Preheat oven to 375°F (190°C).
  3. In a mixing bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and ground ginger until smooth.
  4. Thread cocktail sausages and pineapple chunks onto skewers, alternating, starting with a sausage.
  5. Place skewers on a lined baking sheet and brush with the brown sugar glaze.
  6. Bake for 20-25 minutes, turning halfway and brushing with more glaze.
  7. Broil for an additional 1-2 minutes for caramelization, if desired.
  8. Transfer to a platter and garnish with chopped green onions before serving warm.
