Ingredients
  

Filling:
  • 8 oz cream cheese softened
  • 3 ½ tbsp sugar
  • ½ tsp lemon juice
  • ½ tsp vanilla extract
  • ¼ tsp salt
Wrapper:
  • Egg roll wrappers as needed
  • Water for sealing
Topping:
  • 1 cup sugar
  • 2 tbsp cinnamon
Cooking:
  • Oil for frying enough for 2 inches depth
Optional Toppings:
  • Caramel chocolate sauce, powdered sugar, or fresh fruit

Method
 

Prepare the Filling:
  1. Beat cream cheese, sugar, lemon juice, vanilla extract, and salt in a bowl until smooth and creamy.
Assemble the Egg Rolls:
  1. Place an egg roll wrapper on a flat surface. Add 2 tbsp of filling to the center.
  2. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the top corner with water.
Prepare the Cinnamon-Sugar Mixture:
  1. Mix sugar and cinnamon in a small bowl. Set aside.
Heat the Oil:
  1. Heat 2 inches of oil in a pot to 375°F.
Fry the Egg Rolls:
  1. Fry 3-4 egg rolls at a time for 2 minutes or until golden brown. Remove and drain on paper towels.
Coat and Serve:
  1. Roll warm egg rolls in the cinnamon-sugar mixture. Serve with caramel, chocolate sauce, or fresh fruit.
