Prepare the Filling:
- Beat cream cheese, sugar, lemon juice, vanilla extract, and salt in a bowl until smooth and creamy.
Assemble the Egg Rolls:
- Place an egg roll wrapper on a flat surface. Add 2 tbsp of filling to the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the top corner with water.
Prepare the Cinnamon-Sugar Mixture:
- Mix sugar and cinnamon in a small bowl. Set aside.
Heat the Oil:
- Heat 2 inches of oil in a pot to 375°F.
Fry the Egg Rolls:
- Fry 3-4 egg rolls at a time for 2 minutes or until golden brown. Remove and drain on paper towels.
Coat and Serve:
- Roll warm egg rolls in the cinnamon-sugar mixture. Serve with caramel, chocolate sauce, or fresh fruit.
