  • 1/4 cup chopped fresh mint optional

Method
 

  1. In a large bowl, combine the sliced peaches and arugula or spinach.
  2. In a separate small bowl, whisk together the ricotta cheese, honey, lemon juice, salt, and black pepper until smooth and creamy.
  3. Drizzle the ricotta mixture over the peach and greens mixture, gently tossing to combine.
