Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • cups fresh peaches diced
  • ½ cup white chocolate chips optional
For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract

Method
 

 Preheat and Prepare:
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats to prevent sticking.
2. Cream Butter and Sugars:
  1. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Use a hand mixer or stand mixer for best results.
3. Add Wet Ingredients:
  1. Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
4. Mix Dry Ingredients:
  1. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
5. Fold in Peaches:
  1. Gently fold in the diced peaches and white chocolate chips, if using. Be careful not to overmix to preserve the peaches’ texture.
6. Shape and Bake:
  1. Using a cookie scoop or spoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are golden and the centers are set.
7. Cool and Glaze:
