Make the Fudge Sauce
- Combine dark chocolate chips, coconut oil, and coconut milk in a small saucepan.
- Heat over low, stirring until smooth, or microwave in 30-second intervals. Set aside.
2. Prepare the French Toast Mixture
- In a shallow bowl, whisk together coconut milk, cocoa powder, eggs, sugar, and vanilla extract until fully combined.
3. Cook the French Toast
- Heat a skillet over medium heat and melt 1 tbsp coconut oil.
- Dip each bread slice into the chocolate mixture, coating both sides. Let excess drip off.
- Cook slices in the skillet for 2–3 minutes per side until golden brown. Repeat with remaining bread, adding more oil as needed.
4. Make Cinnamon Coconut Whipped Cream
- In a small bowl, mix cinnamon into the coconut whipped cream. Stir until evenly combined.
5. Assemble the French Toast
- Spread a layer of Nutella on one slice of French toast.
- Add a dollop of cinnamon coconut whipped cream and drizzle with fudge sauce.
- Top with another slice to form a sandwich. Repeat with remaining slices.
6. Garnish and Serve
- Drizzle more fudge sauce over each sandwich.
- Add a dollop of whipped cream, sprinkle with powdered sugar, and garnish with fresh berries or nuts.
