  • 4 Potatoes sliced into ¼-inch rounds
For the Tahini Sauce
  • 1/2 cup Tahini can substitute with almond butter
  • 2 tbsp Lemon Juice adds tanginess to the sauce
  • 1 clove Garlic minced; boosts flavor

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground beef, grated onion, chopped fresh parsley, minced garlic, and spices. If using breadcrumbs, add at this point.
  2. Take small handfuls of the kofta mixture and shape into oval patties, about 3 inches long. Place on a lightly greased baking tray.
  3. Wash and slice potatoes into ¼-inch rounds, then arrange around the kofta on the baking tray. Drizzle with olive oil and season with salt and pepper.
  4. Preheat the oven to 400°F (200°C) and bake for about 30 minutes, until kofta is golden brown and potatoes are tender.
  5. Prepare the tahini sauce by mixing tahini, lemon juice, minced garlic, and a splash of water until creamy.
  6. Drizzle tahini sauce over kofta and potatoes; return to oven for an additional 20 minutes.
