- Preheat your oven to 350°F (175°C) and grease a standard cake pan with butter or oil.
- In a medium bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
- Blend 1 cup of softened butter (or oil) with 1 cup of honey until smooth. Add 3 large eggs, incorporating one at a time.
- Fold in the zest of 1 large orange and 2 tablespoons of freshly grated ginger.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before inverting it onto a wire rack.
- Prepare the glaze by mixing 1/3 cup of honey with the juice of the zested orange and brush over the cooled cake.
