  • 1/3 cup honey
  • 1 large fresh orange juice Feel free to use other juices for different flavors.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease a standard cake pan with butter or oil.
  2. In a medium bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
  3. Blend 1 cup of softened butter (or oil) with 1 cup of honey until smooth. Add 3 large eggs, incorporating one at a time.
  4. Fold in the zest of 1 large orange and 2 tablespoons of freshly grated ginger.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before inverting it onto a wire rack.
  9. Prepare the glaze by mixing 1/3 cup of honey with the juice of the zested orange and brush over the cooled cake.
