For the Custard Filling
  • 2 cups whole milk can swap with almond or coconut milk for dairy-free

  • 4 large egg yolks no worthy substitutes
  • 1/2 cup granulated sugar brown sugar can add a caramel note
  • 1/4 cup cornstarch arrowroot powder is a possible substitute
Optional Topping
  • 1 cup heavy cream can replace with coconut cream for dairy-free
  • 2 tbsp powdered sugar can be omitted if preferred

Method
 

Preparation Steps
  1. In a medium saucepan, combine water, butter, and salt. Bring to a boil, then stir in flour until dough forms.
  2. Let the dough cool for 5 minutes, then add eggs one at a time until the dough is glossy.
  3. Preheat oven to 400°F and line baking sheets with parchment paper. Pipe 1-inch mounds of dough on sheets.
  4. Bake for 20-25 minutes until golden brown. Let cool in the oven for 10 minutes.
  5. In a bowl, whisk egg yolks, sugar, and cornstarch. Heat milk and vanilla until boiling, then temper the egg mixture.
  6. Cook the mixture over medium heat until thickened, then strain and let cool.
  7. Optional: Whip heavy cream with powdered sugar until soft peaks form for a richer filling.
  8. Slice cooled puffs in half, fill with custard, and optionally top with whipped cream and powdered sugar.
