Preparation Steps
- In a medium saucepan, combine water, butter, and salt. Bring to a boil, then stir in flour until dough forms.
- Let the dough cool for 5 minutes, then add eggs one at a time until the dough is glossy.
- Preheat oven to 400°F and line baking sheets with parchment paper. Pipe 1-inch mounds of dough on sheets.
- Bake for 20-25 minutes until golden brown. Let cool in the oven for 10 minutes.
- In a bowl, whisk egg yolks, sugar, and cornstarch. Heat milk and vanilla until boiling, then temper the egg mixture.
- Cook the mixture over medium heat until thickened, then strain and let cool.
- Optional: Whip heavy cream with powdered sugar until soft peaks form for a richer filling.
- Slice cooled puffs in half, fill with custard, and optionally top with whipped cream and powdered sugar.
