Low-Carb Ground Beef Burrito Bowl Recipe – Perfect for Lunch or Dinner

Ingredients
  

  • 1 tablespoon extra virgin olive oil
  • 1 green bell pepper sliced
  • ½ red onion sliced
  • 2 teaspoons dried oregano
  • Salt and ground black pepper to taste
  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning mix
  • cup water
  • 3 –4 cups chopped romaine lettuce
  • 1 cup black beans rinsed and drained (optional for low-carb)
  • cups steamed rice optional for low-carb
  • ½ cup shredded white cheddar cheese
  • Corn salsa as desired
  • Tomato salsa or pico de gallo as desired
  • Guacamole or sliced avocado as desired
  • Optional garnishes: sour cream fresh cilantro, lime wedges

Method
 

  1. Sauté the Vegetables
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the green bell pepper and red onion. Sprinkle with oregano, salt, and black pepper.
  4. Cook for 5–6 minutes until softened but still crisp. Remove from skillet and set aside.
  5. Cook the Ground Beef
  6. In the same skillet, add the ground beef.
  7. Cook for 8–10 minutes, breaking it into crumbles as it browns.
  8. Drain any excess grease, if necessary.
  9. Stir in taco seasoning and water. Let simmer until the liquid is absorbed. Remove from heat.
  10. Assemble the Bowls
  11. Divide chopped romaine lettuce among 4 serving bowls.
  12. Add toppings to each bowl: black beans (if using), cooked peppers and onions, seasoned ground beef, shredded cheese, corn salsa, tomato salsa, and guacamole or sliced avocado.
  13. Garnish and Serve
  14. Top each bowl with a dollop of sour cream, fresh cilantro, and a squeeze of lime. Serve immediately.
