  • 1/3 cup melted butter
  • 2 large eggs
  • 3 tablespoons lemon juice
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup milk
  • 1 cup fresh or frozen blueberries
  • ½ cup chopped walnuts
  • 2 tablespoons grated lemon zest
Glaze Topping
  • ¼ cup white sugar
  • 2 tablespoons lemon juice

Method
 

Preheat the Oven:
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8x4-inch loaf pan or line it with parchment paper for easy removal.
Prepare the Batter:
  1. In a large mixing bowl, beat sugar, melted butter, eggs, and lemon juice until smooth.
  2. In another bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  3. Fold in the blueberries, walnuts, and lemon zest.
  4. Tip: Coat blueberries in a tablespoon of flour to keep them evenly distributed in the batter.
Bake the Bread:
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Glaze:
  1. While the bread bakes, mix sugar and lemon juice in a small bowl until smooth.
Glaze the Bread:
  1. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
  2. Drizzle the glaze over the warm bread and allow it to soak in as the bread cools completely.
