  • 1 pound lean ground beef
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 15-ounce can diced tomatoes (do not drain)
  • 1 15-ounce can tomato sauce or tomato puree
  • 1/2 6-ounce can tomato paste
  • 4 cups chicken broth + 1 cup water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • Black pepper to taste
  • 8 ounces bowtie pasta uncooked
  • 1/2 cup ricotta cheese
  • 2 ounces mozzarella cheese shredded (about 1/2 cup)
  • 1/4 cup parmesan cheese shaved or grated
  • 1/4 cup fresh parsley chopped

Method
 

  1. Build the Flavor Base: Heat olive oil in a large soup pot over medium heat. Add ground beef and cook until browned. Stir in diced onion and minced garlic; sauté until fragrant.
  2. Create the Savory Broth: Mix in diced tomatoes, tomato sauce, and tomato paste. Pour in chicken broth and water, stirring well. Season with Italian seasoning, sea salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  3. Cook the Pasta to Perfection: Stir in the uncooked bowtie pasta. Simmer for 10-15 minutes, stirring occasionally, until pasta is al dente.
  4. Serve It Up Right: Ladle soup into bowls. Top with ricotta, mozzarella, parmesan, and fresh parsley. Enjoy while hot!
