- Wash the green leaf lettuce under cold running water, then dry it using a salad spinner or clean kitchen towel. Cut into bite-sized pieces.
- In a small mixing bowl, combine soy sauce, rice wine vinegar, gochugaru, toasted sesame oil, sesame seeds, sugar, and minced garlic. Whisk until sugar dissolves.
- Add shredded carrots to the bowl with lettuce. Drizzle dressing over the salad and toss gently with tongs or hands for even coating.
