Ingredients
  

For the Bulogi Marinade
  • 500 grams Ribeye or Sirloin Beef you can use pre-sliced beef bulgogi meat from Korean grocery stores for convenience
  • 1/4 cup Asian Pear or Kiwi natural tenderizer that adds sweetness; approximately 1/4 kiwi grated can substitute
  • 1/4 cup Soy Sauce base for marinades
  • 2 tablespoons Brown Sugar adds sweetness and aids in caramelization
  • 2 tablespoons Sesame Oil aromatic oil that enhances flavors
  • 3 cloves Garlic minced
For the Galbi Marinade
  • 1 kg Beef Short Ribs rich, meaty cut; consider flanken-cut or butterflied style
  • 2 tablespoons Honey adds sweetness
For the Samgyeopsal
  • 500 grams Pork Belly thick slices, ask your butcher for slices around 5-7mm thick
For Serving
  • 1 head Lettuce and Perilla Leaves for wrapping meat
  • 1/2 cup Ssamjang dipping sauce from fermented soybean paste and gochujang

Method
 

Preparation
  1. Prepare the marinades by combining bulogi marinade ingredients in a mixing bowl. Refrigerate both marinades for at least 4 hours or overnight for maximum flavor.
Cooking
  1. Blanch bean sprouts for 2-3 minutes, then season with sesame oil, garlic, and salt. Sauté spinach in a pan until wilted. Prepare cucumber salad with vinegar, sugar, and chili flakes.
  2. Arrange the ssam setup with lettuce and perilla leaves, ssamjang, sliced garlic, and fresh chiles.
  3. Preheat the grill to high heat, ensuring proper ventilation.
  4. Grill bulogi for 1-2 minutes per side, avoiding overcrowding.
  5. Grill galbi for 3-4 minutes on each side until caramelized.
  6. Grill samgyeopsal for 4-5 minutes per side until crispy.
  7. Invite guests to build their own ssam with grilled meat, rice, and banchan.
