Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the shredded mozzarella cheese, almond flour, grated Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and black pepper. Mix until well combined.
If using, fold in the sliced pepperoni and shredded cheddar cheese into the mixture.
Using your hands, form small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball into a thin chip shape.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving with sugar-free pizza sauce for dipping.
