Ingredients
  

Crab Cakes
  • 8 ounces lump crab meat drained
  • 1/4 cup keto cracker crumbs or almond flour
  • 2 tablespoons fresh parsley chopped
  • 1 green onion thinly sliced
  • 1/2 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 tablespoons melted butter
Spicy Mayo
  • 1/4 cup mayonnaise
  • 1 teaspoon sriracha
  • 1/2 teaspoon Cajun seasoning

Method
 

. Prepare the Crab Mixture
  1. In a large bowl, gently break up the crab meat with a fork.
  2. Add keto cracker crumbs, parsley, green onion, Old Bay seasoning, salt, and black pepper. Mix lightly to combine.
2. Incorporate the Wet Ingredients
  1. Stir in the egg, mayonnaise, and Dijon mustard until evenly moistened.
  2. Using your hands, form the mixture into 4 patties, each about 1 inch thick.
  3. Place the patties on a wax paper-lined plate and refrigerate for 30 minutes to firm up.
3. Prep the Air Fryer
  1. Preheat the air fryer to 350°F.
  2. Lightly grease the air fryer rack or basket with avocado oil spray.
  3. Brush melted butter on both sides of the crab cakes.
4. Cook the Crab Cakes
  1. Arrange the crab cakes in the air fryer basket, ensuring they do not overlap.
  2. Cook for 10 minutes, flipping carefully halfway through, until golden and crisp.
5. Make the Spicy Mayo
  1. In a small bowl, mix mayonnaise, sriracha, and Cajun seasoning. Adjust seasoning to taste.
6. Serve and Garnish
  1. Serve the crab cakes warm with a dollop of spicy mayo, fresh lemon wedges, and optional garnishes like parsley or green onion.
