Prepare the Chicken:
- Season the chicken breasts with salt and pepper on both sides.
Make the Sauce:
- In a bowl, combine the chicken broth, heavy cream, and grated Parmesan cheese. Stir until well mixed.
- Add minced garlic, dried oregano, dried thyme, and red pepper flakes (if using). Stir to combine.
Cook in the Crockpot:
- Place the seasoned chicken breasts at the bottom of the crockpot.
- Sprinkle the chopped sun-dried tomatoes over the chicken.
- Pour the prepared sauce over the chicken and tomatoes, ensuring everything is covered.
- Cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is tender and cooked through.
