  • 1 medium Jalapeno Minced, seeds removed for less heat
  • 1/4 cup Cilantro Chopped, omit if preferred
  • 2 cloves Garlic Minced
  • 1 lime Lime Zest and Juice Use lemon juice if limes are unavailable
  • to taste Kosher Salt
  • to taste Black Pepper
For Serving
  • 1 bag Blue Corn Tortilla Chips For dipping

Step-by-Step Instructions
  1. Prepare the Ingredients: Rinse and drain the black beans. Gather the Ro-Tel, diced red onion, chopped orange bell pepper, minced jalapeno, chopped cilantro, minced garlic, lime zest and juice, kosher salt, and black pepper.
  2. Mix the Base: In a mixing bowl, combine the black beans, Ro-Tel, red onion, orange bell pepper, jalapeno, cilantro, garlic, lime zest, and juice. Fold until well mixed.
  3. Season to Taste: Add kosher salt and black pepper as desired, mix well and taste to adjust seasoning.
  4. Serve or Store: Transfer to a bowl and serve with blue corn chips or cover and refrigerate until ready.
