- In a small bowl, combine equal parts room temperature unsalted butter and honey, mixing until smooth and creamy. Set aside.
- Preheat your broiler to high (around 550°F) and arrange a baking sheet with a cooling rack. Lay out the slices of bread on the rack.
- Spread the honey butter mixture over each slice of bread, ensuring every corner is coated.
- Pipe a border around the edges of each slice using mayonnaise to create a barrier for the egg.
- Crack one egg atop each slice of bread, gently placing it in the center of the mayonnaise barrier. Season with salt and pepper.
- Distribute the pancetta bits over each egg-topped slice and sprinkle a layer of shredded Parmigiano cheese on top.
