- Preheat your oven to 350°F (175°C).
- Peel and cube the russet potatoes. Place them in salted water and bring to a boil. Cook for about 10-15 minutes until fork-tender.
- Drain the potatoes and return to the pot over low heat for 3 minutes to remove excess moisture.
- Mash the potatoes in a bowl or stand mixer. Gradually add melted butter, cream cheese, and half-and-half until smooth with some lumps.
- Transfer the mixture to a greased 9x13 inch baking dish. Swirl the top and scatter cold butter cubes on top.
- Bake for about 45 minutes until golden on top and creamy inside.
