Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Wrap whole garlic cloves in aluminum foil and roast for 30-40 minutes until soft and caramelized.
  2. In a large mixing bowl, combine all-purpose flour, warm water, and active sourdough starter. Add mashed roasted garlic, fresh rosemary, and salt, mixing until a rough dough forms.
  3. Turn the dough onto a floured surface and knead for 10-15 minutes until smooth and elastic.
  4. Place the kneaded dough in a lightly oiled bowl, cover, and let it rise in a warm spot until doubled in size (2-3 hours).
  5. Deflate the dough on a floured surface, shape into a loaf, and let it rise again for 1-2 hours until puffy.
  6. Preheat oven to 450°F (232°C) with a baking stone or heavy baking pan inside.
  7. Transfer the loaf to the oven and bake for 30-35 minutes until golden brown.
  8. Allow the bread to cool on a wire rack for at least 30 minutes before slicing.
