Step-by-Step Instructions
  1. Prepare the Pan: Lightly spray an 8x8 or 9x9 inch pan with cooking oil or line with parchment paper.
  2. Melt the Mixture: Combine 1 cup of creamy peanut butter, 1/3 cup of honey, and 1/4 cup of coconut oil in a bowl and microwave for 30-45 seconds until soft. Stir until smooth.
  3. Add Flavorful Ingredients: Stir in 1 teaspoon of vanilla extract, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon. Add 1/4 cup of flax meal and 1 scoop of protein powder, mixing until fully combined.
  4. Incorporate Oats and Coconut: Add 1 cup of old-fashioned oats and 1/2 cup of shredded coconut, stirring until well coated.
  5. Fold in Chocolate Chips: If desired, fold in 1/2 cup of mini chocolate chips once the mixture has cooled enough.
  6. Press and Smooth: Transfer the mixture to the prepared pan and press firmly into the corners, smoothing the top.
  7. Chill to Set: Place the pan in the refrigerator or freezer for about 10-15 minutes until firm.
