- Wash and peel the potatoes. Cut them into fries and soak in cold water for 30 minutes.
- Heat oil to 350°F (175°C) and fry potatoes for 5-7 minutes until crispy. Drain and set aside.
- In a saucepan, melt butter over medium heat, whisk in flour for 2 minutes. Gradually add stock while whisking, cooking until thickened for another 5-7 minutes.
- Layer fries in a serving dish, top with cheese curds, and pour gravy over the top.
- Cook eggs to desired doneness and place on top of the poutine.
- Serve immediately while hot, optionally garnishing with herbs or hot sauce.
