Ingredients
  

For the Pasta:
  • cups grape tomatoes
  • 8 ounces block feta cheese
  • 12 ounces bow-tie pasta
  • 4 cups water or chicken broth
For the Chicken:
  • 2 boneless skinless chicken breasts, sliced into bite-sized pieces
  • tablespoons Cajun seasoning
  • 2 tablespoons olive oil
For Seasoning and Garnish:
  • 3 tablespoons olive oil divided
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ cup fresh basil chopped

Method
 

Prepare the Chicken:
  1. Toss chicken with 1 tablespoon Cajun seasoning.
  2. Set Instant Pot to sauté mode, add 2 tablespoons olive oil, and cook chicken until browned on both sides (4–5 minutes). Remove chicken and set aside.
Cook the Pasta and Tomatoes:
  1. Add grape tomatoes, 3 tablespoons olive oil, and Italian seasoning to the Instant Pot.
  2. Place the feta block in the center of the tomatoes.
  3. Pour in water or broth and stir gently. Add uncooked bow-tie pasta, ensuring it’s submerged in liquid.
Pressure Cook the Dish:
  1. Close the lid and set the valve to sealing position.
  2. Cook on high pressure for 5 minutes. Perform a quick release by carefully turning the valve to venting.
Combine Ingredients:
  1. Open the lid and stir the melted feta cheese and burst tomatoes into the pasta to create a creamy sauce.
  2. Add the cooked chicken back to the pot and toss everything together until well combined.
Garnish and Serve:
  1. Sprinkle fresh basil over the pasta and serve immediately.

Notes

  • Use high-quality feta cheese and fresh grape tomatoes for the best flavor.
  • Adjust spice levels by increasing or reducing Cajun seasoning.
  • Store leftovers in the refrigerator for up to 3 days. Reheat with a splash of water or broth to loosen the sauce.
