Cooking Steps
- Heat coconut oil in a large pan over medium-high heat, add onions and sauté until browned, about 5 minutes.
- Add minced garlic, stirring for about 1 minute, then add curry powder, garam masala, and tandoori masala.
- Add apples, potatoes, courgette, and squash, mixing to coat with spices, and sauté for an additional 2 minutes.
- Pour in coconut milk and water, add salt and peanut butter, stir and bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes.
- Stir in adzuki beans and heat through for an additional 3 minutes.
- Remove from heat and let cool for about 10 minutes.
- Serve over rice, with naan, or alongside popadoms.
