Ingredients
  

Curry Base
  • 2 tablespoons Coconut Oil Substitute with vegetable oil if needed.
  • 2 Onions Diced.
  • 4 cloves Garlic Minced.
  • 6 cups Apples Cubed, any firm variety.
  • 1.5 cups Potatoes Cubed.
  • 1.5 cups Courgette/Zucchini Cubed.
  • 1.5 cups Squash Cubed.
Spices
  • 3 teaspoons Curry Powder Your favorite curry mix.
  • 2 teaspoons Garam Masala Allspice makes a good alternative.
  • 2 teaspoons Tandoori Masala Substitute 1 tsp garam masala and 1 tsp paprika.
Creaminess
  • 1 cup Coconut Milk Or soy cream.
  • 1.5 cups Water Adjust for desired thickness.
Flavor Boosters
  • 1 teaspoon Salt Adjust to taste.
  • 1 tablespoon Peanut Butter Almond butter can be substituted.
  • 1 can Adzuki Beans 240 g.

Method
 

Cooking Steps
  1. Heat coconut oil in a large pan over medium-high heat, add onions and sauté until browned, about 5 minutes.
  2. Add minced garlic, stirring for about 1 minute, then add curry powder, garam masala, and tandoori masala.
  3. Add apples, potatoes, courgette, and squash, mixing to coat with spices, and sauté for an additional 2 minutes.
  4. Pour in coconut milk and water, add salt and peanut butter, stir and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes.
  6. Stir in adzuki beans and heat through for an additional 3 minutes.
  7. Remove from heat and let cool for about 10 minutes.
  8. Serve over rice, with naan, or alongside popadoms.
