Ingredients
  

For the Pico de Gallo:
  • 1 medium tomato diced
  • 1 small jalapeño pepper seeded and diced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
For the Breakfast Bagel:
  • 8 slices thick-cut bacon
  • 1 pound ground pork sausage
  • 4 slices sharp cheddar cheese
  • 4 large eggs
  • 1 tablespoon unsalted butter
  • 4 onion bagels split and toasted
  • ½ cup cowboy butter softened
  • Salt and pepper to taste

Method
 

Make the Pico de Gallo:
  1. Combine the diced tomato, jalapeño, lime juice, salt, and pepper in a small bowl. Mix well and set aside in the refrigerator.
Prepare the Bacon:
  1. Preheat the oven to 400°F (205°C).
  2. Place bacon slices on a foil-lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels.
Cook the Sausage Patties:
  1. Divide the ground sausage into four equal portions and shape into patties slightly larger than the bagel diameter.
  2. Heat a skillet over medium heat and cook the patties for 3-4 minutes per side until browned and fully cooked (internal temperature of 160°F).
  3. Place a slice of cheddar cheese on each patty while still warm to melt.
Fry the Eggs:
  1. In the same skillet, melt the butter over medium heat. Fry the eggs to your preferred doneness and season with salt and pepper.
Toast the Bagels:
  1. Toast the split bagels until golden and crispy.
Assemble the Bagels:
  1. Spread a generous layer of cowboy butter on both halves of the bagels.
  2. On the bottom half, layer a sausage patty, 2 slices of bacon, a fried egg, and a spoonful of pico de gallo.
  3. Top with the remaining bagel half and press gently to secure.
Serve and Enjoy:
  1. Serve immediately while the ingredients are warm, and enjoy with your favorite side dishes or beverages.
