  • 1 cup chopped spinach fresh or frozen
  • 1 cup diced bell peppers any color
  • 1 cup diced tomatoes fresh or canned, drained
  • 1/2 cup diced onion
  • 4 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the cottage cheese, cheddar cheese, spinach, bell peppers, tomatoes, onion, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix well until all ingredients are evenly distributed.
  3. In a separate bowl, whisk the eggs until well beaten. Pour the eggs into the cheese and vegetable mixture, stirring until fully combined.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
  6. Remove from the oven and let it cool for 5-10 minutes. Garnish with chopped parsley before serving.
