Ingredients
  

  • 1/2 cup fresh or frozen raspberries
  • 3/4 cup almond milk or coconut milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chia seeds

Method
 

Blend the Base:
  1. In a blender, combine the raspberries, almond or coconut milk, maple syrup, and vanilla extract. Blend until smooth and creamy.
Mix in Chia Seeds:
  1. Pour the blended mixture into a bowl or jar. Stir in the chia seeds and whisk thoroughly to evenly distribute them.
Refrigerate:
  1. Cover the container and refrigerate for at least 1 hour or overnight. The chia seeds will absorb the liquid, forming a pudding-like texture.
Stir and Serve:
  1. Remove the pudding from the fridge and give it a good stir to break up any clumps. Top with your favorite fruits, nuts, granola, or other toppings and serve.
