Ingredients
  

  • 1/3 cup vegan cream cheese softened
  • 3/4 cup smooth peanut butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups store-bought vegan whipped cream
Optional Chocolate Ganache (for layering):
  • 1/4 cup cacao powder
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 tsp vanilla extract
  • Pinch of salt
Toppings (optional):
  • Vegan whipped cream
  • Chocolate shavings
  • Crushed peanuts

Method
 

Prepare the Mousse Base:
  1. In a large mixing bowl, combine vegan cream cheese, peanut butter, maple syrup, vanilla extract, and salt. Use a hand mixer or whisk to whip until smooth and creamy.
Incorporate Whipped Cream:
  1. Gradually fold in the vegan whipped cream with a spatula. Beat on medium speed for 5 minutes until the mousse is light and fluffy.
Make the Chocolate Ganache (Optional):
  1. In a small bowl, mix cacao powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt until smooth.
Assemble the Mousse:
  1. In small jars or dessert cups, layer the peanut butter mousse and chocolate ganache. Start with mousse, then a layer of ganache, and repeat until the jars are filled.
Add Toppings:
  1. Top with vegan whipped cream, chocolate shavings, and crushed peanuts for extra indulgence.
Chill and Serve:
  1. Refrigerate for at least 1 hour to set. Serve chilled and enjoy!
