Method
. Prepare the Bell Peppers
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and cores.
- Arrange the peppers upright in a baking dish.
2. Make the Filling
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for another minute.
- Add ground beef and cook until browned, breaking it into crumbles.
- Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, smoked paprika, salt, and pepper. Simmer for 5-7 minutes, allowing flavors to meld.
3. Stuff the Peppers
- Spoon the prepared filling into the bell peppers, packing it firmly.
- Sprinkle shredded cheddar cheese over the top of each stuffed pepper.
4. Bake
- Cover the baking dish with foil and bake for 10-12 minutes.
- Remove the foil and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve
- Garnish the stuffed peppers with freshly chopped parsley.
- Serve warm and enjoy!
