  • 7 bell peppers
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup cooked brown rice
  • 1 cup canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish

. Prepare the Bell Peppers
  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and cores.
  3. Arrange the peppers upright in a baking dish.
2. Make the Filling
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add ground beef and cook until browned, breaking it into crumbles.
  5. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, smoked paprika, salt, and pepper. Simmer for 5-7 minutes, allowing flavors to meld.
3. Stuff the Peppers
  1. Spoon the prepared filling into the bell peppers, packing it firmly.
  2. Sprinkle shredded cheddar cheese over the top of each stuffed pepper.
4. Bake
  1. Cover the baking dish with foil and bake for 10-12 minutes.
  2. Remove the foil and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve
  1. Garnish the stuffed peppers with freshly chopped parsley.
  2. Serve warm and enjoy!
