Ingredients
  

For the Chicken:
  • 2 large chicken breasts split lengthwise (or 4 medium chicken breasts)
  • 1 tablespoon olive oil
  • Kosher salt to taste
  • Black pepper to taste
For the Gravy:
  • 3 tablespoons butter
  • 1 tablespoon chicken base e.g., Better Than Bouillon
  • 4 tablespoons all-purpose flour
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cups chicken stock
  • ½ cup water
  • ¼ cup heavy cream optional

Method
 

Prepare the Chicken:
  1. Season chicken breasts with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat.
Cook the Chicken:
  1. Add chicken to the skillet and cook for 5 minutes on each side, or until golden brown.
  2. Check for doneness using a meat thermometer (internal temperature should reach 165°F).
  3. Remove the chicken from the skillet and set aside.
Make the Gravy:
  1. In the same skillet, melt butter over medium heat.
  2. Stir in chicken base until fully dissolved.
  3. Combine flour, onion powder, garlic powder, and a pinch of black pepper in a small bowl, then whisk the mixture into the skillet to form a roux.
  4. Gradually pour in chicken stock and water, whisking constantly to prevent lumps.
  5. For a creamier texture, stir in heavy cream.
  6. Simmer the gravy for 5–7 minutes, stirring occasionally, until it thickens. Adjust seasoning as needed.
Combine Chicken and Gravy:
  1. Return the cooked chicken breasts to the skillet, spooning the gravy over them.
  2. Simmer for 3–5 minutes, allowing the chicken to absorb the flavors.
Serve:
  1. Serve warm over mashed potatoes, rice, or roasted vegetables for a complete, hearty meal.
