Prepare the Chicken:
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a large skillet over medium heat.
Cook the Chicken:
- Add chicken to the skillet and cook for 5 minutes on each side, or until golden brown.
- Check for doneness using a meat thermometer (internal temperature should reach 165°F).

- In the same skillet, melt butter over medium heat.

- Gradually pour in chicken stock and water, whisking constantly to prevent lumps.
- For a creamier texture, stir in heavy cream.
- Simmer the gravy for 5–7 minutes, stirring occasionally, until it thickens. Adjust seasoning as needed.
Combine Chicken and Gravy:
- Return the cooked chicken breasts to the skillet, spooning the gravy over them.
- Simmer for 3–5 minutes, allowing the chicken to absorb the flavors.
Serve:
- Serve warm over mashed potatoes, rice, or roasted vegetables for a complete, hearty meal.
