Step-by-Step Instructions
  1. Begin by cleaning the squid; remove the head, legs, and internal organs. Rinse it thoroughly under cold water.
  2. In a mixing bowl, combine the ground coriander, dried oregano, paprika, salt, and pepper with extra virgin olive oil. Toss the squid in this mixture and let marinate for 15 minutes.
  3. Preheat your grill to high heat, around 450°F (232°C), and oil the grill grates lightly.
  4. Score one side of the marinated squid in a crosshatch pattern to prevent curling while grilling.
  5. Place the squid scored-side down on the grill. Grill for 3-4 minutes, then flip and grill for another 3-4 minutes.
  6. Whisk together fresh lemon juice and extra virgin olive oil in a small bowl to prepare the Ladolemono sauce.
  7. Remove grilled squid from the grill, drizzle with Ladolemono sauce, and garnish with dried oregano. Serve immediately with lemon wedges.
