Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons olive oil
  • Chopped green onions for garnish optional

Method

  1. In a medium bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, ground ginger, black pepper, and red pepper flakes (if using) until well combined.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade and discard the marinade. Place the chicken thighs on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  5. Remove the chicken from the grill and let it rest for 5 minutes before slicing. Garnish with chopped green onions if desired.

Notes

  • For a smoky flavor, try adding a few drops of liquid smoke to the marinade.
  • You can also substitute chicken thighs with boneless, skinless chicken breasts for a leaner option.
  • Serve with grilled vegetables or a fresh salad for a complete meal.
