Ingredients
  

  • 8 ounces halloumi cheese cut into 1-inch cubes
  • 1 medium zucchini sliced into 1/4-inch rounds
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lemon wedges for serving

Method
 

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a large bowl, combine the olive oil, lemon juice, dried thyme, garlic powder, salt, and pepper. Mix well.
  3. Add the halloumi cubes, zucchini, and bell peppers to the bowl and toss gently to coat all the ingredients in the marinade. Let it sit for about 15 minutes to absorb the flavors.
  4. Thread the halloumi, zucchini, and bell pepper pieces onto the skewers, alternating between the ingredients.
  5. Place the skewers on the preheated grill and cook for about 3-4 minutes on each side, or until the halloumi is golden brown and the vegetables are tender.
  6. Remove the skewers from the grill and serve immediately with lemon wedges on the side.
