Step-by-Step Instructions
  1. Preheat a large saucepan over medium-low heat and add 2 tablespoons of olive oil or butter. Warm for about 2 minutes until it shimmers.
  2. Add 8 ounces of sliced mushrooms to the heated saucepan and sauté for approximately 5 minutes, stirring occasionally until golden brown. Season lightly with salt and pepper after about 4 minutes.
  3. Pour in 1 cup of milk or cream and crumble in 4 ounces of gorgonzola cheese. Stir continuously over low heat for 3-4 minutes until the gorgonzola has melted.
  4. Remove from heat, drizzle in 1 tablespoon of white truffle oil and stir in your choice of ground sage, oregano, and thyme. Adjust seasoning with salt and pepper as needed.
  5. For a thicker sauce, return the pan to low heat and add additional gorgonzola or ¼ cup of grated parmesan cheese. Stir gently for another minute until melted.
  6. Toss the sauce with your favorite cooked pasta and serve immediately with an extra sprinkle of grated parmesan on top.
