- Preheat a large saucepan over medium-low heat and add 2 tablespoons of olive oil or butter. Warm for about 2 minutes until it shimmers.
- Add 8 ounces of sliced mushrooms to the heated saucepan and sauté for approximately 5 minutes, stirring occasionally until golden brown. Season lightly with salt and pepper after about 4 minutes.
- Pour in 1 cup of milk or cream and crumble in 4 ounces of gorgonzola cheese. Stir continuously over low heat for 3-4 minutes until the gorgonzola has melted.
- Remove from heat, drizzle in 1 tablespoon of white truffle oil and stir in your choice of ground sage, oregano, and thyme. Adjust seasoning with salt and pepper as needed.
- For a thicker sauce, return the pan to low heat and add additional gorgonzola or ¼ cup of grated parmesan cheese. Stir gently for another minute until melted.
- Toss the sauce with your favorite cooked pasta and serve immediately with an extra sprinkle of grated parmesan on top.
