Preparation Steps
  1. Sterilize 2-3 half-pint canning jars in boiling water for 10 minutes, then keep warm in a low-temperature oven.
  2. Place a small ceramic plate in the freezer for the wrinkle test.
  3. In a large pot, combine finely diced ripe golden fruit, granulated sugar, fresh lemon juice, and water.
  4. Set over medium-high heat, bring to a rolling boil, stirring constantly for 15-20 minutes.
  5. Check the consistency with a spoon; it should coat the back. Use the frozen plate for the wrinkle test to ensure it holds its shape.
  6. Remove from heat and stir in the fresh thyme sprigs.
  7. Ladle the hot jam into prepared jars, leaving 1/4 inch of headspace.
  8. Wipe jar rims with a clean cloth, seal, and process in a boiling water bath for 10 minutes.
  9. After processing, let the jars cool on a wire rack.
