Step 1: Prepare Potatoes
- Preheat your oven to 375°F (190°C).
- Place the peeled and cut potatoes in a large pot and cover with cold water. Add a pinch of salt.
Step 2: Cook Potatoes
- Bring the pot to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

- Drain the potatoes and return them to the pot. Add sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper.
- Mash the potatoes until mostly smooth, leaving a bit of texture for heartiness.
Step 4: Incorporate Cheese and Onions
- Gently fold in shredded cheddar cheese and sliced green onions until evenly distributed.
Step 5: Assemble Casserole
- Transfer the mashed potato mixture into a greased 9x13-inch baking dish. Smooth the top with a spatula.

- Bake in the preheated oven for 20-25 minutes, or until the edges are bubbly and the top is lightly golden.
