Ingredients
  

  • 4 pounds russet potatoes peeled and cut into 1-inch pieces
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter melted
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced green onions plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

Method
 

Step 1: Prepare Potatoes
  1. Preheat your oven to 375°F (190°C).
  2. Place the peeled and cut potatoes in a large pot and cover with cold water. Add a pinch of salt.
Step 2: Cook Potatoes
  1. Bring the pot to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
Step 3: Mash and Mix
  1. Drain the potatoes and return them to the pot. Add sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper.
  2. Mash the potatoes until mostly smooth, leaving a bit of texture for heartiness.
Step 4: Incorporate Cheese and Onions
  1. Gently fold in shredded cheddar cheese and sliced green onions until evenly distributed.
Step 5: Assemble Casserole
  1. Transfer the mashed potato mixture into a greased 9x13-inch baking dish. Smooth the top with a spatula.
