Cook the Chicken
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add chicken pieces to the skillet and season with salt, pepper, and dried Italian herbs.
Cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
Remove the chicken from the skillet and set aside.
Sauté the Garlic
In the same skillet, add the minced garlic.
Sauté for about 30 seconds until fragrant, being careful not to burn it.
Deglaze the Pan
Pour the chicken broth into the skillet and use a wooden spoon to scrape up any browned bits from the bottom.
These add incredible depth of flavor to your sauce.
Cook the Gnocchi
Add the potato gnocchi to the skillet with the chicken broth.
Bring to a simmer and cook for 3–4 minutes, stirring occasionally, until the gnocchi begins to soften.
Make the Creamy Sauce
Reduce the heat to medium-low and pour in the heavy cream.
Stir gently to combine, allowing the sauce to simmer for 2–3 minutes until it thickens slightly.
Combine Ingredients
Return the cooked chicken to the skillet along with the grated Parmesan cheese.
Stir everything together until the cheese melts, the chicken is heated through, and the gnocchi is tender.
Finish with Spinach
Add fresh spinach to the skillet and stir gently until it wilts.
Garnish with fresh basil leaves for a pop of flavor and color.
Serve and Enjoy
Taste and adjust the seasoning with more salt and pepper if needed.
Serve the dish hot, garnished with extra Parmesan cheese if desired.
