Ingredients

  • 1 1/2 to 2 lbs steak ribeye, sirloin, or tenderloin, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup mushrooms sliced (optional)
  • 1 tablespoon fresh parsley chopped

Method

  1. Prepare the Steak
  2. Slice the steak into bite-size pieces and pat dry with paper towels.
  3. Season the steak with salt and pepper, ensuring even coverage.
  4. Heat the Skillet
  5. Heat a large non-stick skillet over high heat until fully heated.
  6. Add olive oil and let it shimmer.
  7. Cook the Steak Bites
  8. Place steak pieces in the skillet in a single layer. Avoid overcrowding.
  9. Sear for 2-3 minutes without stirring to form a golden crust.
Flip and cook for another 2-3 minutes to your desired doneness:
  1. Rare: 120°F
  2. Medium-Rare: 125°F
  3. Medium: 130°F
  4. Remove steak from the skillet and set aside.
  5. Sauté the Mushrooms (Optional)
  6. Add mushrooms to the skillet with a drizzle of olive oil.
  7. Cook for 5-6 minutes until golden and tender. Remove and set aside.
  8. Make the Garlic Butter Sauce
  9. Reduce heat to medium and melt the butter in the skillet.
  10. Add minced garlic and sauté for 30-60 seconds until fragrant, being careful not to burn.
  11. Combine and Serve
  12. Return the steak (and mushrooms, if using) to the skillet.
  13. Toss to coat everything in the garlic butter sauce.
  14. Sprinkle with fresh parsley and serve immediately.

Notes

  • For the best sear, ensure the steak is dry and the skillet is very hot before adding the meat.
  • Adjust the seasoning and butter amount to taste.
  • Add red pepper flakes to the garlic butter sauce for a spicy kick.
