Ingredients
  

  • 2 boneless skinless chicken breasts, grilled and sliced
  • 1 pound penne pasta
  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 3 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1/2 cup Parmesan cheese grated
  • Salt and pepper to taste

Method
 

  1. Cook the Pasta
  2. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente.
  3. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  4. Prepare the Bruschetta Mix
  5. In a medium bowl, combine cherry tomatoes, red onion, garlic, and fresh basil.
  6. Drizzle with balsamic vinegar and olive oil, then season with salt and pepper. Toss to combine.
  7. Warm the Pasta and Bruschetta
  8. In a large skillet over medium heat, add the cooked pasta and bruschetta mix.
  9. Stir gently, adding reserved pasta water a little at a time to create a light sauce.
  10. Add the Grilled Chicken
  11. Slice the grilled chicken breasts into thin strips and add them to the skillet.
  12. Mix gently to distribute the chicken evenly throughout the dish.
  13. Serve and Garnish
  14. Plate the pasta and top with grated Parmesan cheese.
  15. Garnish with additional fresh basil or a drizzle of balsamic glaze, if desired.
