Ingredients
  

  • 1 cup natural peanut butter smooth or crunchy
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, honey (or maple syrup), egg, and vanilla extract. Mix until smooth and well combined.
  3. Add the baking soda and salt to the mixture, stirring until fully incorporated.
  4. Fold in the rolled oats and dark chocolate chips (if using) until evenly distributed.
  5. Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with the back of the spoon or your fingers.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
