Prepare the Cheese Mixture: In a large bowl, mix shredded Pepper Jack cheese and diced jalapeños. Shape into bite-sized balls (about 1 ½ inches in diameter). Freeze for 30-60 minutes to help them hold their shape.

Coat the Bites: Set up three bowls: one with flour, one with beaten egg and milk, and one with bread crumbs mixed with cayenne pepper, paprika, and garlic powder. Roll each frozen cheese ball in flour, dip in the egg-milk mixture, and coat with the spiced bread crumbs.
Fry to Perfection: Fry a few at a time for 3-4 minutes until golden brown and crispy. Drain on paper towels before serving.
